Preparation: Thaw completely. If frozen or partially frozen, defrost pork slightly in microwave. Do not over-microwave, or meat will become tough.
Cooking Instructions: Oven: Preheat oven to 400ºF. Discard paper, place pork in baking pan, tucking the thin end under to create a roast of even thickness. Cover pan with foil. Place pan in oven and bake for 20 minutes. Remove foil and roast for another 15 minutes or until internal temperature of pork is 150F on an instant read thermometer. Transfer pork to a cutting board and tent with foil. Let rest for 5 minutes before slicing. Cooking times may vary due to differences in ovens. Grill: Preheat grill to medium heat. Grill tenderloin 20-30 minutes, turning every 5 minutes until internal temperature is 150F on instant read thermometer. Serve cherry balsamic sauce in room temperature with cooked tenderloin.
