Don’t tell the kids what’s in the green-tinted potatoes! Sneak this wonder veggie into your diet. Edamame is a complete protein containing all of the amino acid building blocks and is rich in omega-3 fatty acids and isoflavones. This kids-friendly recipe is flavored slightly with chicken broth.

 

Preparation:  Thaw completely.  If frozen or partially frozen, replace board lid with foil and increase covered baking time 10-15 minutes. 

 

Cooking Instructions:  Preheat oven to 350F.  Replace board lid with foil.  Place pan on baking sheet. Bake covered 20-25 minutes.  Uncover pan and bake another 5-10 minutes or until center of mashed potatoes is hot.  Cooking time varies due to differences in ovens.
