Besides adding a sweet subtle flavor to this chili, pumpkin is a ready source of vitamin A and fiber that boosts the nutrition content of this healthy chili that is packed with white beans, kidney beans, onions, celery, green peppers and corn. Simply delicious!  Stovetop: 25 minutes, thawed.

 

Preparation: Thaw completely. If frozen or partially frozen, defrost in microwave before cooking on stovetop.

 

Cooking Instructions: Place contents of bag in a large saucepan. Add 1¼ cup water. Cover and simmer 15-20 minutes.

 

Suggested Sides: Super Suppers Corn Muffins. Top with dollop of sour cream or shredded cheddar cheese, if desired.
